Chilli lovers will enjoy this spicy meal, which is great for warming up on chilly Halloween evenings!
What You Need:
- 2 (8 1/2 oz.) pkgs. corn bread mix
- 2/3 C of milk
- 2 eggs
- 1/4 t black paste food coloring
- 1 T of canola or coconut oil
- 1 sweet red pepper, sliced
- 1 Serrano pepper, seed and chopped very fine
- 1/3 C onion, chopped
- 2 (15 oz.) cans vegetarian chili
Instructions:
1. Preheat the oven to 400 degrees
2. Generously spray the bottom and sides of a 9 X 5 loaf pan with a cooking spray, or coat with oil.
3. Place the corn bread mix into a large mixing bowl.
4. Add the milk and eggs and whisk until the mixture is completely blended.
5. Add in the food coloring and blend until well combined.
6. Transfer the batter to the prepared loaf pan.
7. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
8. Cool in the pan for 10 minutes, then take it out and place on a wire rack to cool completely.
9. When the bread has cooled slice off a quarter of the loaf from the top.
10. Gently remove the bread in the center of the bottom piece, leaving a 1 inch shell.
11. Pour the oil into a skillet, and place over medium heat.
12. Stir in the onion and both peppers.
13. Cook for 8 minutes or until tender.
14. Remove 1/4 C of the mixture and set aside.
15. Stir the chilli into the remaining onion mixture until the ingredients are fully blended.
16. Heat the mixture for 10 minutes or until it is heated through completely.
17. Fill the hollowed out bread with the chilli mixture.
18. Spoon the reserved onion mixture over the top of the chilli.
19. Cover with the top quarter of the loaf.
This coffin loaf provides a fun way to serve your chilli on a cold Halloween night. If there is any chilli remaining that doesn’t fit into the loaf, serve it in a bowl next to the coffin, in case you run out.
