This easy to make savory Halloween recipe resembles ghoulish dismembered fingers, and makes a great Halloween party food! Although the recipe calls for chicken, a vegetarian alternative such as Quorn may be used if you prefer.
What You Need:
- 1 sweet red pepper
- 2 T flour
- 2 t + 1 T Cajun seasoning, divided
- 3 eggs
- 1 1/2 C cornflake crumbs
- 2 T green onion, chopped
- 1 lb. boneless skinless chicken breast, cut into 16, 3/4 inch strips [or vegetarian alternative]
Instructions:
1. Preheat the oven to 350 degrees.
2. Lightly spray a baking sheet with a non stick cooking spray.
3. Cut the pepper into 16 triangles and set aside.
4. Place the flour and 2 t of the Cajun seasoning into a plastic zip lock bag.
5. Close the bag and shake thoroughly to combine the ingredients together.
6. Place the eggs in a shallow bowl and beat lightly with a fork.
7. Place the cornflake crumbs in a shallow bowl.
8. Add the green onion and remaining Cajun seasoning to the cornflake crumbs and toss to combine.
9. Place a few strips of chicken into the flour mixture, close and shake until it is lightly covered.
10. Dip the coated strips into the egg, and shake off any excess.
11. Roll the strips in the cornflake mixture until they’re well covered, and place on the baking sheet.
12. Repeat until all of the chicken strips are covered.
13. Place the chicken into the oven and bake for 20 minutes or until the juices run clear.
14. Remove and leave until it’s cool enough to handle.
15. Cut a small slit into one end of each strip.
16. Insert a pepper triangle into each strip with the point facing outwards.
These creepy looking claws will really “grab” the attention of your guests. The Cajun seasoning provides a bold taste, and the cornflake covering helps to keep the chicken moist during baking. If you’re making these for children, you might want to leave out the Cajun seasoning.
Makes 8 servings.
