Cookies on a stick make a great snack for kids and adults alike, and are perfect for Halloween parties.
What You Need:
- 1 (12 oz.) pkg. vanilla baking chips
- 2 T solid shortening, divided
- Orange food coloring
- 1 (16 oz.) pkg. cream filled chocolate cookies
- 32 Popsicle sticks
- 1 (6 oz.) pkg. semisweet chocolate chips
Instructions:
1. Place the vanilla baking chips and 1 T of shortening together in a microwaveable bowl.
2. Place in the microwave on high for 1 minute.
3. Remove the bowl from the microwave and stir the mixture until it is smooth.
4. If the chips aren’t thoroughly melted, place the bowl back in the microwave for another 30 seconds, then continue to stir until smooth.
5. Add the food coloring and stir into the mixture until you achieve the shade of orange you want.
6. Remove the top from each cookie.
7. Dip each Popsicle stick in the melted chip mixture and place one on each cookie half.
8. Return the tops to the cookies and place them on a sheet of waxed paper.
9. Freeze the cookies for 15 minutes.
10. If the chip mixture has hardened, reheat it in the microwave for 15 seconds to melt again.
11. Dip each of the cookie pops into the melted chocolate. Ensure that each cookie is thoroughly covered, and allow any excess to drip back into the bowl.
12. Return the cookies to the wax paper and freeze for 30 minutes or until set.
13. Place the chocolate chips and remaining shortening into a microwaveable bowl.
14. Microwave on high for one minute, then stir until smooth.
15. Drizzle the mixture over each of the cookie pops.
These lollipops are an unusual twist on the standard Halloween cookies, and kids will love them. They make great nibbles for your party guests, or you can wrap the cookies individually to hand out to trick-or-treaters.
Makes 32 lollipops.
