Savory Halloween Recipe Idea #1 – Ghoulish Red Bloodshot Eyeballs

Eyeballs are one of those things that gross out just about everyone, so these horrid looking ‘eyeball’ eggs will do a great job of scary your party guests this Halloween!

What You Need:

  • 3 C of hot water

  • 2 T red food coloring
  • 1 T of white vinegar
  • 6 hard boiled eggs, cracked but not peeled
  • 1/3 C of mayonnaise
  • 1/4 C of green onions, chopped fine
  • 2 T cilantro, minced
  • 2 t Dijon-style mustard
  • 12 ripe olives, sliced
  • 1 t ketchup

Instructions:

1. Pour the water into a large mixing bowl.
2. Add the food coloring and vinegar and whisk until thoroughly blended.
3. Add the eggs. If necessary, add more hot water to ensure the eggs are completely covered.
4. Let the eggs stand for 30 minutes.
5. Remove the eggs and peel the shells.
6. Cut the eggs in half.
7. Remove the yolks and place in a small mixing bowl.
8. Place the whites on a platter and set aside.
9. Mash the yolks with a fork.
10. Add the onions, mustard, mayonnaise and cilantro, and stir until all ingredients are well combined.
11. Stuff the egg whites with the egg yolk mixture.
12. Press 1 slice of the olive into the egg yolk mixture.
13. Fill the center ring of each olive slice with a dab of ketchup.
14. Refrigerate until ready to serve.

These devilled eggs appear truly gruesome, but taste a lot better than they look! They are best served within two hours of preparation.

Makes 1 dozen.
